Nurtured from Spring through to the end of Autumn, then left to mature till harvest time in the Winter. Water Chestnuts are a food imbued with the essence of all four seasons.

In Spring, plants were well spaced (as shown in the picture on the left) to ensure good growth. At the end of Summer, the paddy was a dense mass of 3' tall lush green culms.

This picture clearly shows the root system well on its way. Formation of a daughter plant is also very evident. Strong growth is necessary to ensure a bountiful harvest.

A handful of corms on paper made from water chestnut culms. Corms mature in winter and can be harvested as needed. Harvested corms should be refrigerated.

The soft, silky culms can be used to make beautiful paper in a variety of thicknesses and textures. Colour can also be varied by the use of culms in various stages of growth.
